A conversation is not a training set
People say things to an AI assistant they would not say out loud. When that assistant is closed-source and lives in the cloud, the transcript can be stored on someone else's servers and used to train models nobody outside the vendor can inspect.
Open-source models that run on your own device are private in a different way. The weights are published, the conversation is processed locally, and none of it is transmitted.
A privacy setting can be changed by whoever wrote it. A model running on your own hardware cannot quietly start uploading.
