Go to Settings > Privacy > Disappearing Messages to set a default timer for all new conversations. Options range from 5 seconds to 7 days. This default applies to every new conversation you start.
In any conversation, tap the contact name > Disappearing Messages to set a custom timer for that specific chat. This overrides the default for that conversation. Different contacts can have different disappearing message timers.
Open any existing conversation, access settings through the contact name at the top, and enable disappearing messages. The timer applies to all new messages from that point forward. Existing messages are not affected retroactively.
